A demi-lacto vegan means she is not a vegan. At best she's a vegetarian. It's like the argument I had once where someone told me they were veggie and only ate fish and wouldn't accept that they weren't veggie.

It is pretty disgusting that someone's ethics have been compromised. Imagine how you'd feel if you wanted veg but got flesh instead?
